FROM ROLLY'S KITCHEN!

Dealer Dave the time has come to put your culinary skills to the test again (Rolled Oats Not Required).

CHOCOLATE CHIP BANANA MUFFINS

Dry Mixture:
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup semi-sweet chocolate chips

Moist Mixture:
1/2 cup butter or margarine
3/4 cup sugar
2 large eggs
1 tsp. vanilla
1 cup ripe banana***

Mix first 3 dry ingredients. Stir in chocolate chips. Cream butter and sugar with electric mixer. Beat eggs in, 1 at a time and add vanilla. Add moist mixture to dry mixture. Stir until batter is moist but still lumpy. Fill 12 baking cups approximately 3/4 full. Bake at 350 degrees for 25 minutes. YEILD: 12 Muffins.

***Dealer Dave, ripe bananas means the peel is black! (Ha! Ha!)

Speaking of cooking, check out The Salvation Army website, acticle on New Hope Chef Training Program starting in North Vancouver. Could we do it in Cambridge?
